THE Mayor of Vale Royal, Councillor Doug Shingler, has launched Cheshire's Talented Young Chef initiative at So Wine bar and bistro in Tarporley.
Michael Biddle, Commis chef at So Wine, and nominated young chef for the evening, prepared a three-course dinner using local produce.
Michael’s menu featured a classic seafood cocktail, followed by chargrilled lemon and rosemary chicken and finished with poached pear in mulled wine with homemade ice-cream.
Cllr Shingler, said: “We are delighted to be hosting the first event in the Talented Young Chef Initiative in Vale Royal. Developing skills for the hospitality industry is extremely important. Michael has demonstrated his talent and I am sure he will go from success to success in his chosen career.”
The next event will be at Sandbach’s Chimney House Hotel in January, where the second of six young Cheshire chefs will prepare their menu.
At the end of the project, the six young chefs will come together to work as one team to prepare a gourmet menu at one of their chosen restaurants.
