A REVAMPED Cheshire pub has opened its doors following a £2.9m, 12-month renovation.

Family-owned hotel group Nelson Hotels has reopened its newest property, The Fishpool Inn in Delamere.

The transformation of the former country property into a gastropub, will see The Fishpool meet the standards of Nelson Hotels’ other three properties – The Grosvenor Pulford Hotel & Spa near Chester, The Bear’s Paw in Warmingham and The Pheasant Inn in Higher Burwardsley.

The gastropub opening has also created about 50 new jobs.

Included in the works are a new oak-framed sandstone extension to the original building, will allow the number of covers to more than double from 60 to about 150.

Beer and local real ales will be kept in optimum condition thanks to the development of a new cellar 9ft underground.

More than 300 additional trees, plants and shrubs have been planted to enhance the grounds.

Two additions to the kitchen are the Spanish Inka charcoal oven, which allows for healthier, oil free cooking, and the Woodstone oven, providing diners with culinary treats such as hand-crafted pies, pizzas and flatbreads.

Nelson Hotels’ operations director, Andrew Nelson, said: “We’re very excited about The Fishpool Inn and we’ve been working extremely hard to deliver another outstanding venue for Cheshire.

“We’ve sympathetically restored and added to the building and grounds.

“We’re overwhelmed with the interest so far – the renovation of the Fishpool Inn has created a lot of excitement in the area and we hope for this to long continue.”
