A Year 5 pupil at Belgrave Primary School has won a competition for her culinary skills.
The PTA at the Westminster Park school organised a tiffin baking competition in partnership with nearby delicatessen Al Dente.
Molly Clayton won the opportunity to make the tiffin with some friends at the deli and share the finished product with the class back at school.
Headteacher Deanne Garratt said: “An afternoon cooking session was arranged by Amanda and Colin Parsonage who have owned the deli for five years. The children were really interested in the layout of the kitchen where food is prepared and the size of the freezers, fridges and oven. The main excitement was having a taste of the melted chocolate!”
Here is the winning recipe:
Cranberry and Pistachio Muffins
Ingredients:
100g unsalted butter
3 tbsp golden syrup
2 tbsp.cocoa powder
30g cranberries
30g raisins
200g chocolate (milk, dark or a mix)
200g shortcake biscuits
40g pistachios
Method:
1. In a saucepan over a high heat, melt the butter and syrup.
2. Add the cocoa powder and dried cranberries and stir.
3. Place the biscuits in a ziplock bag and crush with a rolling pin.
4. Add the crushed biscuits to the melted butter mix and mix well until all biscuit pieces are coated.
5. Place the heatproof dish over a pan of simmering water and melt the chocolate.
6. Once the chocolate has melted add the chopped pistachios and stir to combine.
7. Spread the biscuit mix in a lined cake tin and pour over melted chocolate.
8. Place in fridge and leave to set for at least two hours.
