THE Cheshire’s Talented Young Chef initiative entered its fourth year with a launch event at an award-winning Chester hotel.

The scheme, which is co-ordinated by Visit Chester & Cheshire, will include a year- long programme of events at some of county’s best restaurants and hotels.

A launch event was held at the four-star ABode hotel, whose MC Café Bar & Grill was recently named Restaurant of the Year at the Cheshire Life Food & Drink Awards.

Pam Billington of Visit Chester & Cheshire said: “The Talented Young Chef evenings are an excellent way to demonstrate the talent of young chefs from across Cheshire and provide an outlet for them to explore their drive and passion for food.”

On the night ABode’s 23-year- old sous chef Andy Sheridan, who came third in the Welsh Junior Chef of the Year, prepared a special menu.

It included Cajun salmon with quinoa salad, pressed belly and tenderloin of pork, tenderloin of pork, pickled red cabbage, pomme puree and butternut squash with a wholegrain mustard jus, and a blackberry and vodka granite with lemon curd and vanilla foam.

Following the launch, Andy, who also once finished in the top four of the BBC’s Young Chef of the Year, went on to take part in a cook-off, where 12 of the county’s most promising young chefs came together.

They battled it out to win the title of Cheshire’s Most Up and Coming Chef aged 17-25.
