A FORMER head chef at one of the region’s most respected and popular restaurants has joined the kitchen team at the luxury Inglewood Manor Hotel in Ledsham.

Sinead Wallace, 40, who has more than two decades experience working in hotels across the UK, joins as senior sous chef under the hotel’s newly appointed head chef, Steve Hartley.

The catering veteran, who ran the Gem Restaurant in Heswall with her husband Derrek for eight years, is looking forward to contributing to the major review of menus that began in preparation for the restaurant’s complete refurbishment this month.

Sinead said: “These are exciting times for all the staff at Inglewood. Me and my husband both decided we wanted a change and I took the decision to return to hotels which were my first love.

“Now I am delighted to be a part of the team here at Inglewood because Steve is determined to build this hotel into a must-try establishment for lovers of good food.

“I believe completely in the philosophy of fine dining and I will be proud to help Steve achieve his vision for the restaurant.”

Sinead is well-qualified in the preparation of the finest foods having worked in a series of top hotel restaurants after leaving catering college. And she was instrumental in getting the Gem recommended by the prestigious Michellin Guide.

“My personal favourite is classic French cooking because of the flavours, the sauces and the rich and colourful history of French cuisine. I think I am just as excited about the new-look restaurant as Steve. I’m sure 2009 is going to be Inglewood’s year.”
