Pop-up restaurants at the University of Chester are open for business on just two dates before the end of this year.

Bookings for the dinner menu on Friday, November 25 at the De Gaulle Brasserie in Churchill House, Queen’s Park Campus, are being taken between 8.30-9.30pm, as tables at earlier sittings are full.

Two courses are £21.95 and three, £28.95, with a nominal corkage charge for those bringing their own wine.

On the menu are starters including a hearty soup, terrine and Middle-Eastern-influenced salad.

To follow, there is tender lamb shank, lemon sole in sauce or a combination of sweet potato, caramelised red onion, apricots, chestnuts and buttered greens, in a ‘Wellington’ roll.

Anyone still with some appetite left after all that can take advantage of cheese and biscuits or Black Forest panna cotta or a retro pineapple upside-down cake.

Turkey with all the trimmings is only one of the main course options when Senate House opens its doors again for a Christmas Sunday Lunch on December 18, between noon-3pm.

For fish-lovers, there is sea bass with a herbal twist, and vegetarian diners can choose a Mediterranean-style pasta dish.

Desserts range from traditional home-made Christmas cake, with Cashel Blue cheese on the side, to a mouth-watering mulled fruit trifle and a spiced winter tart with ice-cream.

For those tempted by starters, there is a warming soup, salad with roasted chestnuts or seafood cocktail with Bloody Mary sauce.

Three courses are £22.95 and two, £16.95, and a wine list is available.

The university’s catering services team has just added to its catalogue of trophies with a coveted Green Gown Award to acknowledge its approach to sustainability.

Domestic bursar and director of hospitality and residential services Ian White said: “We take a real pride in what we do and the feedback we’ve had from everyone who’s attended the pop-up restaurants has been phenomenal. The concept has been a runaway success. Initially, we’d only discussed opening for a couple of dates, but those who hadn’t eaten at the Uuniversity before have become repeat customers and have spread the word to the wider community.

“Each opening has been followed by enquiries about when the next pop-up is taking place, so as long as the demand is there, we will be looking at next year’s calendar!”
