THE chips are down at Mickle Trafford Village School and cook Jane Christian wants it to stay that way.

Jane, the school cook, has not served chips at School Lane for the 10 years she has been dishing up dinners to the children.

Long before Jamie Oliver revolutionised school meals, Jane was already thinking about healthy eating.

“My daughter was at school at the time and I was fed up with the junk food that she was being served. I had been to catering college and worked in the restaurant business so I decided to give it a go in the school kitchen.”

She used to work at her mum’s restaurant, Jean’s Kitchen, on St Anne’s Street, which was recommended in the Egon Ronay guide.

Jane does all the cooking herself with an assistant to help serve the meals. I do a popular chicken breast in tomato and basil sauce which the children have with homemade garlic wedges or rice.

“Salmon fishcakes also go down well and I offer things like tacos and wraps.”

There are 193 children at the school and often more than half of them take up the option of school dinners. Parents are are also invited to join their childen at any time.
