A TALENTED young chef from Tarporley has been the first to show off his culinary skills in a council-sponsored initiative.
Michael Biddle, 23, commis chef at So Wine, was nominated as the first entrant in Cheshire's Talented Young Chef initiative at So Wine bar and bistro in Tarporley.
The Utkinton chef prepared a three-course dinner using local produce.
Michael’s menu featured a classic seafood cocktail, followed by chargrilled lemon and rosemary chicken and finished with poached pear in mulled wine with homemade ice-cream.
More than 30 people, including the Mayor and Mayoress, Doug and Pam Shingler, attended the event and were impressed by the quality of Michael’s cooking and the venue.
Aaron Dale, bar manager at So Wine, said: “Everyone had a great time and we’ve already had good feedback on the food.”
Cllr Shingler, added: “We are delighted to be hosting the first event in the Talented Young Chef Initiative in Vale Royal. Developing skills for the hospitality industry is extremely important. Michael has demonstrated his talent and I am sure he will go from success to success in his chosen career.”
The next event will be at Sandbach’s Chimney House Hotel in January, where the second of six young Cheshire chefs will prepare their menu. At the end of the project, the chefs will come together to work as a team, to prepare a gourmet menu at a chosen restaurant.
