JUDGES at The Chester Food, Drink & Lifestyle Festival 2011 have chosen this year’s sausage competition finalists.

At the cook-off, staged in Joseph Benjamin restaurant on Monday, chairman of judges and three time winner David Joinson described the standard of entry as ‘incredibly high’ and a credit to the butchers of Chester.

Fellow judge, head of catering for Chester Race Company, Phil Dougherty said that the panel found it difficult to come up with a final four.

“I was very happy to be one of the judges this year but I really didn’t think the competition would be so intense,” he said.

Coordinated by Chester Cheese shop owner Carole Faulkner, this is the ninth year the competition has taken place.

She said: “Each year our butchers keep coming up with the goods and find inspiration to create that definitive sausage that everyone will want and this year is no exception.”

The four sausages in the semi final are:

Pork with honey and mustard sausage made by Bebbingtons, the butchers, Chester Market.

A traditional pork sausage made with younger people in mind, by Fernyhoughs of Chester Market.

And two from Edges of Handbridge, a Cheshire free range pork with red onion, garlic and sage and another with mixed herbs.

The four finalists will be judged by the audience on Monday, April 25, at the Chester Food, Drink & Lifestyle Festival at 11am.
