A weekly feature on the lives and loves of people from our city.

My day: I get up around 7ish and after a quick shower and spruce up head across the road to work.

I’ll set up my ‘office’; check all the reports from the previous evening and my emails whilst enjoying my first coffee of the day.

At 8.30am I’ll nip back across to the house to see the children off to school, then take our dog Fudge for a walk with my wife. Then it’s straight back to my desk, where I will spend the remainder of the morning on paperwork, e-mails or meetings.

Lunch is normally a salad or a sandwich at my desk before or after lunch service.

I always like to have a walk around and check everything is running smoothly, front and back of house.

 

In the afternoon I will sit down with the general manager, the head chef or the events and marketing co-ordinator depending on what day of the week it is.

I am also working on a new project at the moment which is currently hush-hush, but will be a great addition to the Chester dining scene, so some time is taken up with planning and meetings to do with that.

At night time we do a number of things depending on the day; I coach my son’s Under 11s cricket team at Christleton, so it might be training or a match and my daughter plays netball for Boughton Belles so it may be something to do with that.

On a quieter night it might be another stroll along the canal or across the fields with the dog.

I always go back to the pub at least once during evening service to check on everything and make sure all is good. Mondays are two-for-one burgers and Wednesdays two-for-one pizzas, so I may need to lend a hand working the tables.

There may be a bit of homework to help with & after some TV the kids go to bed about nine-ish. Karine and I will then chill with a cuppa and a bit of TV; we’ve just finished the excellent Breaking Bad and are looking for a new box set to get into!

Bedtime is around 10.30-11pm and I generally sleep like a baby until it’s time to do it all again the next day!

Dress: A shirt or polo shirt, jeans and shoes.

What is the favourite part of your job? Giving people a great experience and helping them to create happy memories!

What is your least favourite part of your job? Disciplinaries, as it means someone isn’t working out with us and not performing within our culture.

What would be your dream job if you weren’t doing what you do now? A sports journalist or a barrister.

How do you relax when you are not working? Spending time with family and friends, watching/coaching my children’s sports activities, walking, cycling and playing golf.

What is your favourite film? Goodfellas.

What is your favourite book? Setting The Table by Danny Meyer.

What is your favourite song? River Ocean – Love & Happiness.

If a film was made of your life, who would you like to play you? Bruce Willis .

Have you had your 15 minutes of fame? I don’t think so and I don’t mind. Profile for the business is what drives me and not personal acclaim. We have a great team at the Ring O’ Bells and we all play our part.
